Cowboy Beans: Hearty, Smoky, and Packed with Western Flavor
If you’re looking for a dish that’s bold, filling, and full of old-fashioned flavor, Cowboy Beans are the ultimate comfort food. This rustic recipe combines tender beans, smoky bacon, savory ground beef, and a tangy-sweet sauce that’s slow-cooked to perfection.
Inspired by classic chuckwagon cooking on the open range, Cowboy Beans are a dish that feeds the soul — simple ingredients, big flavor, and a whole lot of heart.
A True Western Classic
Cowboy Beans have roots in the rugged days of cattle drives and campfire cooking. Cowboys needed hearty, protein-rich meals that could be made with simple ingredients — beans, meat, and spices. Over time, this humble dish became a staple at family cookouts, potlucks, and backyard barbecues across the South and Midwest.
Today, it’s still the same smoky, savory, and slightly sweet dish that generations have loved — perfect as a side, or even as the main course.
Ingredients:
-
1 lb ground beef
-
6 slices bacon, chopped
-
1 small onion, diced
-
2 cloves garlic, minced
-
2 (15-ounce) cans pork and beans (do not drain)
-
1 (15-ounce) can kidney beans, drained and rinsed
-
1 (15-ounce) can pinto beans, drained and rinsed
-
½ cup barbecue sauce
-
⅓ cup ketchup
-
¼ cup brown sugar
-
1 tablespoon yellow mustard
-
1 tablespoon Worcestershire sauce
-
1 teaspoon chili powder
-
Salt and black pepper, to taste
Instructions:
-
Cook the Bacon and Beef:
In a large skillet or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving about 1 tablespoon of bacon drippings in the pan. Add the ground beef and onion to the skillet. Cook until the beef is browned and the onions are tender. Drain excess grease. -
Add Garlic and Seasoning:
Stir in the minced garlic and cook for 30 seconds until fragrant. -
Combine the Beans and Sauce:
Add the pork and beans, kidney beans, and pinto beans to the skillet. Stir in the barbecue sauce, ketchup, brown sugar, mustard, Worcestershire sauce, chili powder, salt, and pepper. -
Simmer or Bake:
Reduce heat and let the mixture simmer on the stovetop for 30 minutes, stirring occasionally.
Alternatively, transfer everything to a baking dish and bake uncovered at 350°F (175°C) for 45 minutes for a thicker, baked texture. -
Serve and Enjoy:
Top with the crispy bacon pieces before serving. Cowboy Beans are delicious on their own, or served alongside cornbread, grilled meats, or roasted vegetables.
Tips for the Best Cowboy Beans:
-
For deeper flavor, use smoked bacon or sausage in place of some of the beef.
-
Add a dash of hot sauce or cayenne pepper for a little Western kick.
-
Make it ahead of time — the flavors only get better as they sit!
