We’ve all had those kitchen moments — when you try something new, take a bite, and instantly know you’ve hit gold. But nothing confirms it quite like when your husband (who’s usually more of a “quiet eater”) puts down his fork, looks at you wide-eyed, and says:

And that’s exactly what happened the first time I made this dish.

The Recipe: Creamy Garlic Chicken with Spinach and Sun-Dried Tomatoes

This dish is rich, comforting, and packed with flavor — crispy seared chicken breasts smothered in a garlicky, creamy Parmesan sauce with wilted spinach and tangy sun-dried tomatoes.
The best part? It’s all made in one skillet, in under 30 minutes.

Ingredients:

  • 2–3 boneless, skinless chicken breasts

  • Salt, pepper, paprika (for seasoning)

  • 2 tbsp olive oil

  • 3–4 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken broth (or white wine for extra flavor)

  • ½ cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • 1 cup fresh spinach

  • ½ cup sun-dried tomatoes (in oil), sliced

  • Optional: pinch of red pepper flakes for heat


Directions:

  1. Season & sear: Season chicken on both sides with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat and sear the chicken for 4–5 minutes per side, until golden and cooked through. Remove and set aside.

  2. Sauté garlic: In the same skillet, reduce heat and sauté garlic until fragrant (about 1 minute).

  3. Make the sauce: Add broth and stir to deglaze the pan. Stir in cream, Parmesan, and Italian seasoning. Let simmer for 2–3 minutes until slightly thickened.

  4. Add veggies: Stir in spinach and sun-dried tomatoes. Cook until spinach is wilted.

  5. Return chicken: Add chicken back to the skillet, spoon sauce over the top, and let it all simmer together for another 3–4 minutes.

  6. Serve: Garnish with extra Parmesan or fresh herbs. Serve over mashed potatoes, pasta, or with crusty bread to soak up every drop of sauce.
