Pot Roast with Potatoes and Carrots

A classic, one-pot comfort meal for when you need something real.

Ingredients:

  • 3–4 lb chuck roast

  • Salt and pepper

  • 2 tbsp olive oil

  • 1 onion, chopped

  • 4 cloves garlic, minced

  • 2 tbsp tomato paste (optional)

  • 1 cup red wine or beef broth

  • 2–3 cups beef broth

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried thyme

  • 1 tsp rosemary

  • 1 bay leaf

  • 4–5 carrots, cut into chunks

  • 4–5 potatoes, halved or quartered

Instructions:

  1. Season & sear the roast in hot oil until browned on all sides.

  2. Sauté onion, garlic & tomato paste in the same pot.

  3. Deglaze with wine or broth, scraping up the flavorful bits.

  4. Add the roast back, along with remaining broth and seasonings.

  5. Slow-roast at 300°F for 3 hours, then add potatoes and carrots.

  6. Cook 1 more hour, or until everything is tender and falling apart.

  7. Serve hot, spooning broth over the top. Total comfort.
